Our Story

Our story began in the midst of the pandemic: Greg had long envisioned creating delicious, gourmet doughnuts, and took the opportunity to begin trialing dough recipes. Once satisfied with the product, together with his partner Lauren, began making and selling doughnuts from their home in Seagrave, Ontario.

Myles was working as a sous and pastry chef at a local restaurant, whilst

nurturing his true passion of sourdough breads, selling from his house on

days off to family and friends. He dreamed of starting his own business to

showcase his love and talent for sourdough breads, pastries, and desserts.

The stars aligned joining Myles, Greg, and Lauren together to bring their

bakery vision to life.

Little Thief Bakery Co. officially opened its doors January 2023 in Uxbridge,

Ontario, greeting the community with their small batch and artisanal breads,

doughnuts, and more! With an emphasis on high quality ingredients, and

baked goods handcrafted from scratch, our passion focuses on elevating

bakery classics with a creative flair.
